Super Easy and Healthy Pancakes!
I found this recipe on Pinterest a while ago but never tried it before this morning. Super easy, tasty and healthy.
1 tsp of cinnamon (optional)
Blueberries, nuts or any other fruit pieces (optional)
I used my Bullet mixer to mix banana, eggs and cinnamon. I did not have any blueberries and didn’t want to add any nut this time. If you do decide to add them, do so after mixing the original ingredients so the fruit/nuts are not pureed.
Pour onto the skillet, on medium to high heat, flip after you start to see holes appear on the pancake and voila, you have super clean and tasty pancakes. I used hemp oil to cook and added two tablespoons of ricotta cheese for additional taste and protein. Because of the banana’s natural sweetness there was no need for a syrup or sugar. The above amount of ingredients yielded 4 large pancakes. My Husband and I ate two each. It could be used for one person for a larger breakfast, especially if you add fruit instead of ricotta cheese.
Love this recipe! I have tried many other healthier variations of pancake batter using chickpeas, buckwheat and other flours, however, unless I buy a premade dry mix it never worked for me, and even some pre-made mixes still came out pretty bad. This one is super easy and worked really well. It is basically an innovative way to eat eggs for breakfast.
I am getting back into the groove of things, enjoying the second trimester and starting to post more recipies and diary entries.
